DAOSA crafts premium sparkling wines from our estate-managed vineyards using our own adaptation of the Champagne method, trademarked as Method Classic™. Every detail - from hand harvesting to extended maturation on lees - is meticulously considered to create wines of poise, complexity and balance.
Deviation Road, Adelaide Hills

Deviation Road owners Hamish and Kate Laurie have been producing premium Adelaide Hills sparkling wine for over 25 years. Kate's French winemaking training and Hamish's love of viticulture combine to create a handcrafted range of award-winning traditional method sparkling wines and textural aromatic still wines.
Grey-Smith Wines, Mount Gambier / Coonawarra

Grey-Smith Wines was established in 2009 by winemaker Uli Grey-Smith. The vision was to make Sparkling Chardonnay wines that celebrate the expressions of Chardonnay in the Blanc de Blancs style. Vineyard Expression, the influence of time on lees, time in bottle maturation, all contribute to the fine mineral bead, and delicious flavours that linger on. These sparkling wines are for the aperitif and are enjoyable with food. The dry-style (zero dosage) blancs de blancs are available at independent bottle shops and often available by the glass at your favourite restaurants and eateries.
Mordrelle Wines, Adelaide Hills

Mordrelle Wines is a family-owned boutique producer in the Adelaide Hills, born from winemaker Martin Moran’s lifelong passion for viticulture and sparkling wine. Drawing on his Argentinian heritage and meticulous training, Martin handcrafts bottle-fermented sparkling and vibrant reds from carefully selected Chardonnay and other varieties, with every stage from hand picking to tirage and disgorging completed with exacting care. The result is elegant, long-aged wines that capture the cool-climate purity and fine texture of their Adelaide Hills home. Mordrelle will be sharing a sparkling red, bottle fermented at UnWined UnCovered - can you guess the variety?
House of Arras, Tasmania

From Tasmania's pristine cool climate vineyards, House of Arras crafts Australia's most awarded sparkling wines. Winemaker Ed Carr employs a meticulous approach including extended lees ageing, known as tirage, which has become synonymous with the House of Arras style. Each cuvée, from the vibrant non-vintage wines through to the iconic E.J. Carr Late Disgorged and rare Museum release Blanc de Blancs is a study in elegance, complexity and time.
